Corn masala curry is a simple & unique Indian curry recipe, prepared with sweet corn kernels in creamy tomato, onion & cashew nut based gravy. This quick and easy creamy masala corn sabzi recipe is a most lovable dish at our home. It is mildly sweet and is ideal for fewer spice eaters. It tastes great when served with naan or roti but also can serve with jeera rice. In this sweet corn gravy, I'd not use any heavy ingredients like butter and ghee. Fry till color changes. Add green chillies & fry with onion. - Add turmeric powder, kashmiri red chilli powder, red chilli powder, coriander powder, cumin powder tomato-ginger-garlic paste. Mix well & cook till oil separates. - Add cashewnut paste & cook for 2 mins. Add sweet corn, paneer, water (as required), salt & sugar. Mix everything well. Cover & cook for 5 mins on medium flame. - Add garam masala powder, kasuri methi, milk powder & fresh cream. Mix well & let it cook for 1 minute. In this makai ki sabji, I have added a generous amount of Kasuri methi (dried fenugreek leaves), which gives this recipe a different taste. Also, by combining fresh milk cream or malai, we can make the gravy rich. This sweet corn sabzi recipe is easy to make at home, once you have done a little preparation. If you are planning to make this sabzi for a get-together or small house parties, then I would suggest that you boil the corn kernels and puree the tomato beforehand. It'll save you a lot of time. Also, this makai dum masala recipe goes well not only with chappatis or phulkas but also a great side dish for veg pulao, capsicum pulao, or jeera rice.
