Namaste! Welcome to Ruchkar Mejwani with Smita.
So today I am going to show you a nice and healthy recipe i.e. ‘Kansachi Bhel’ (Corn Bhel).
For chutney (sauce) I have taken 10 seedless dates.
Tamarind equal to 1 lemon.
I am going to add 2 cups water.
And will keep this for boiling.
As this cooks I am going to add some asafoetida.
1 tsp roasted cumin powder.
1 tsp red chilli powder.
We will take 5 mins to cook this chutney (Paste).
Let’s make our green chutney until this cooks.
For that I have taken 3 green chillies.
15-20 fresh mint leaves.
1 cup coriander leaves.
3 cloves of garlic.
And some lemon juice.
I am going to add some salt just before I grind it.
Now, let’s grind our green chutney.
Our pudina (Mint leaves) chutney is ready.
Let’s remove it in a bowl.
The tamarind and dates have soften.
Let’s add 4 tbsp jaggery in it and melt it.
The jaggery has melted as well.
So, let’s switch off the stove and allow it to cool down.
This has cooled.
Now, I am going to grind this tamarind-Jaggery chutney.
Our tamarind-jaggery chutney is ready as well.
Let’s remove it out in a bowl.
I am going to add some salt in this chutney.
I am going to mix this nicely.
Now, let’s prepare our bhel.
I have taken 2 cups of fresh boiled corn kernels.
I am removing it in a vessel.
I have boiled 1 cup chickpeas. I am taking that as well.
1 small finely chopped capsicum.
1 small finely chopped onion.
1 finely chopped tomato.
I am going to mix all the ingredients after adding some salt.
Add little salt as the chutneys include salt as well.
I am going to mix this.
I am adding the pudina chutney in this.
I have added about 2 tbsp.
And our tamarind-jaggery chutney.
Add about 2-3 tbsp.
I am going to mix this nicely.


I am removing this bhel in a serving dish.
I am adding some sev on it.
Some finely chopped coriander.
Some lemon juice.
Some chaat masala.
And our ‘Kansachi Bhel’ is ready to eat.

Ingredients for Tamarind chutney:- 10 Deseeded Dates Tamarind, small ball 2 Cup Water Asafoetida 1 tsp Roasted Cumin powder 1 tsp Red chilli powder 4 tbsp Jaggery Ingredients for Pudina chutney: 3 Green Chillies 15-20 Fresh Mint Leaves 1 Cup Coriander leaves 3 Garlic pods Lemon juice Salt to taste Ingredients for the Corn Bhel: 2 Cups Corn, Boiled 1 Cup Chickpeas, Boiled 1 Small Capsicum, finely chopped 1 Small Onion, finely chopped 1 Tomato, finely chopped Salt to taste 2 tbsp Pudina Chutney 2 -3 tbsp Tamarind Chutney Garnishing: Sev Chaat Masala Coriander Leaves Lemon Juice Method for Tamarind chutney:- In a pan add dates, tamarind, water and cook it. While it is cooking, add asafoetida, cumin powder and red chilli powder. Add jaggery and cook the mixture till it melts. Afer the jaggery melts, switch off the flame and let the mixture cool down. Now grind the mixture after it cools down, Add some salt to the chutney and mix it. Our tamarind chutney is ready. Method for Pudina chutney:- In a blender jar add green chillies, mint leaves, coriander, garlic, lemon juice, salt, and grind them. Our Pudina Chutney is ready. Method for Corn Bhel: In a vessel add corn, chickpea, capsicum, onion, tomato, salt and mix well. Add pudina chutney, tamarind chutney, mix well. Take it out on a serving plate and garnish it with Sev, coriander, lemon juice, chaat masala and our Kansachi Bhel is ready to eat.
