Today we will prepare bhutte ka kees.
Bhutte (corn) ka kees is a special recipe of Indore.
It is the street food of Indore. It is really tasty.
So let's start preparing bhutte ka kees.
Tender corn cobs - 4. You can also use sweet corn.
Milk - 1 cup.
Grated fresh coconut - 3-4 tbsp.
Finely chopped green coriander leaves - 2-3 tbsp.
Clarified butter - 2 tbsp.
Finely chopped green chillies - 2.
Ginger paste - 1 tsp or 1 inch long ginger grated.
A pinch of asafoetida.
Cumin seeds - 1/2 tsp.
Mustard seeds - 1/2 tsp.
Red chilly powder - half of 1/4 tsp.
Turmeric powder - half of 1/4 tsp.
Salt - 3/4 tsp.
Sugar - 1 tsp.
For bhutte ka kees grate the corn by slighlty rotating it.
If you don't have corn corb then you can use sweet corn kernels.
Take a cup of sweet corn and grind them coarsely.
Grated corn is finally ready. Now we will prepare bhutte ka kees.
Turn on the flame and heat the pan. Add clarified butter to the pan.
We can also use cooking oil instead of clarified butter.
To the warm clarified butter
Add asafoetida powder, cumin seeds, mustard seeds.
Add ginger paste, green chilly, turmeric powder and grated corn paste.
Stir fry all the ingredients properly until the colour changes slightly.
Sauteed corn paste is finally ready.
We have stir fried the mixture continuously for 6 mins.
Fresh aroma is emanating from the mixture and it's colour has also changed.
Now add red chilly powder, milk, sugar
And boil the mixture by continuously stirring it.
When the mixture starts boiling close it with a lid and simmer it for 5-6 mins.
After 5 mins let's check the mixture. Earlier we had stirred it for a while.
Now we will add salt and mix it.
Again close with a lid and cook the mixture for 5 mins.
Stir the mixture every two mins.
Overall we have cooked the bhutte ka kees for 12 mins on low flame.
We stir fried the mixture every two minutes.
A separate layer of clarified butter can be seen in the pan.
Bhutte ka kees is finally ready.
Add lemon juice and sprinkle some chopped coriander leaves and mix it.
Turn off the flame and transfer the kees to a plate.
Garnish it with grated coconut and green coriander leaves.
Bhutte ka kees is ready.
Bhutte ka kees is really tasty and is easy to prepare.
If you are not preparing the kees in a non stick wok
Then the corn paste sticks to the wok.
Slightly heat the wok and add 3 tbsp oil or clarified butter.
Stir fry all the ingredients and if it sticks to the wok then you can add more oil to it.
If you are preparing it in a non stick wok
Then less amount of oil is required for the preparation.
